Description

Bring on the fall weather! One of our fall favorites is PUMPKIN. Not only can pumpkins be carved into jack-o-lanterns, but they can be used in many different dishes– from breakfast to dinner. They are very nutritious, offering many vitamins and minerals, as well as fiber. Try our delicious pumpkin spice pancakes to warm up your fall mornings.


Ingredients

  • 1/2 cup quick cooking oats
  • 1/2 cup low-fat buttermilk
  • 1/2 cup 1% milk
  • 1/3 cup pumpkin puree
  • 2 eggs
  • 1 tablespoon canola oil
  • 2 tablespoons brown sugar, packed
  • 1/2 cup whole wheat flour
  • 1/2 cup white flour
  • 1 teaspoon pumpkin pie spice (or cinnamon)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat skillet on stovetop on medium heat.
  2. In a bowl combine oats, milk and buttermilk. Set aside for 15-20 minutes.
  3. Beat in eggs and oil.
  4. Add in dry ingredients, and mix until moistened.
  5. Cook 2-3 minutes per side.
